    Oven-Baked Roots with Orange Olive Oil

    2 fennel bulbs
    1 pound fingerling potatoes, unpeeled (I used white, but red would be fine too)
    2 pounds peeled carrots

    1. Chop all vegetables to roughly the same size, leaving them a large bite-size
    2. Toss with orange olive oil and salt to taste
    3. Bake in the oven at 350 degrees for one hour, tossing every 20 minutes

    As a vegetarian I enjoyed these all by themselves, but non-vegetarians might enjoy grilled chicken breast (rubbed with more orange oil) or even a firm white fish alongside.
